Really enjoying your balkan yogurt starters, was having a look at your other products and noticed that you have another starter called Bulgarian.
The thing that confuses me is the back of the packs of both products lists the same two bacteria, so is there any difference between the two and if so what?

Yes, there is a difference - the proportion of the bacterial strains in the blend is different, and this makes The Balkan style yogurt a degree milder than Bulgarian yogurt.
Also, the temperature of incubation could be about 3-5 degrees lower for the Balkan style.
The Bulgarian starter needs 45 degrees Celsius to set.
The difference is most visible in the first 1-3 recultivations. Then the texture and taste would become very similar.
