Can I freeze kefir once it’s been made?

And if so for how long? Can I freeze the whole batch or do I need to take out a few tablespoons and freeze it? How long does it keep in the freezer? I wanna take a break from eating kefir.

You can freeze 1 spoon, 100 grams, 1L, 10L or any amount.
The important point is to keep it in sanitised with boiling water containers and keep it sealed in order to isolate it from other environmental bacteria.
You can keep it in the freezer for very long. If assume that the freezer never stops, you can keep it for years or decades.

Does the good bacteria live throughout this?

Yes, the bacteria hibernate during this and when later add them to milk will start a new fermentation.
