Can I mix cooked fruits pre-fermentation?

hello,
is it possible to mix jam/ fruit puree / died cooked fruits with the milk before fermentation step then split the milk fruit puree mix into containers and let them ferment?
would the sugar content in the fruit puree affect the fermentation process or the thickness of the end product?
2nd issue, is adding lemon juice to the milk will stop the yeast of working properly?
I have automatic fermentation cabinet " 1-24h / 10C-50C " it has auto mode x- of hours at x of temperature then goes to fridge mode.
Cheers!

Hi,
The milk should be pure as posible before the fermentation as for this purpose and best results is recommended to boil it and cool it down.
Anything added will contaminate the milk and will slow down or completely stops the fermentation. The texture depends on the fat content of the milk. The lemon juice is quite acidic. Adding lemon juice should separate the milk as any concentrated enough acidic substance.
