Hello,
New here so hello but have my kefir starter arriving tonight and I’m going to try it in an actual yogurt maker this time instead of just room temp. I was wondering how to flavour it?
I made milk kefir from grains a couple of years ago and although I tried really hard I never quite liked the flavour but I would like the health benefits so am trying again.
How can I make it taste less sour and should it be a second fermentation the way you do with water kefir or just stir something into it?
Thanks,
Hi Mouse,
Here is the video which explains the different kinds of Kefir Kefir grains or Freeze-dried starter(click to watch). There are also more videos about how to make it and other useful info so please have a look.
The freeze-dried Kefir is mild in taste. If made in a yogurt maker become thick(like yogurt) It will be liquid in most cases if the yoghurt maker is not used for incubation.
If you follow the incubation time (for the first and second batch) you will be able to manage a milder taste for a very long time. You can add any fruits, honey or whatever you wish after the kefir is ready and before the fridge stage.
Please always keep a backup of pure kefir so you can reculture further batches.
I find that diluting it with orange juice works well. Or I stir in defrosted frozen berries - blueberries are nice. Defrosted berries produce a bit of juice which gives a better flavour to the kefir than fresh ones, although you could maybe mash fresh ones a bit to make them produce juice.
Thank you both very much. This is useful stuff and since I haven’t quite taken the plunge yet, I have plenty of time to practise. I might try it this weekend.
