I saw posts discussing vegan milks, of which soy was recommended. Does anyone have any suggestions concerning Keto milks, of which soy is a no-no. I have tried using almond milk and then thickening it with xanthan gum. I did not like the results (texture, taste). I had previously made yogurt in my instant pot, which previously came out great. I have the cultures from Natural Probiotics at the ready, but I would sure appreciate some guidance.

It is important to consider the natural part of the making yogurt .
The lactobacteria work best with dairy milk.
If other medium is used the other results will be delivered.
