You’re meant to use only 1 litre of milk when you start with a new sachet of kefir culture. I forgot and used 2 litres of milk and it was too late because I remembered after I put the new sachet in! So I added another sachet in, making two sachets. Will this work or have I completely messed up?
It should be OK. The recomended quantities are ideal, however those quntities mentione are still fine.
The only thing is that the incubation time would increase,so please be patient

How much do I need to take out to make the next batch? Usually for one litre it’s 3tablespoons, but if I’ve made 2 litres with 2 sachets, do I take the same out or more?
3 tablespoons of ready kefir should work fine when reculture with 2L or 3L as well. So it should be fine

If you reculture(using a few spoons of ready kefir and milk) the incubation time is short It could be 3-6 to 10 hours as this depends on the amount of the milk and temperature of incubation
If you make the first batch( Kefir starter and milk) the incubation time depends on the temperature of incubation and amount of the milk.
In both cases, you need to keep an eye on the mix
For recultivation - start checking after 3 hours and then on every 2 hours.
For the first bach - start checking after 12 hours and then every 3 hours
The easiest way is to make the first batch with 1L of milk and 1 sachet and reculture from that amount further batches as this will save time.

Well a bit longer than the suggested timing above. The temperature is also important
So please keep an eye on the mix
