Using long life milk

I live in Spain and fresh milk is not readily available… do I still have to boil the milk before starting. Thank you

Many people do not boil long life kinds of milk however boiling is very useful as it breaks down some enzymes, evaporates the water in the milk which consequently speeds up the fermentation and delivers better texture of the end product.
