Why Different Milks Produce Different Yogurt

A question that comes up regularly is why a yogurt made with the same starter culture can turn out completely different when a different milk is used.

Many people assume the culture is responsible for most of the changes they see during fermentation. While the culture certainly matters, the milk often has an even bigger influence on the final result.

Over the years, we have seen countless examples where someone makes several successful batches of yogurt, switches to a different milk, and suddenly notices changes in texture, flavour, or thickness. The yogurt may become thicker, softer, creamier, tangier, or release more whey.

Usually, this is perfectly normal.

Milk is a natural agricultural product. Unlike ingredients produced in a laboratory, milk varies depending on the animal, breed, diet, season, and processing methods used by the dairy.

One of the biggest factors is protein.

As yogurt ferments, the increasing acidity causes milk proteins to form the network that gives yogurt its structure. Milks with higher protein content generally produce thicker yogurts because they form a stronger gel.

This is one reason sheep milk often produces naturally thick yogurt, while goat milk tends to create a softer and creamier texture. Buffalo milk is also known for producing exceptionally rich and dense yogurt because of its higher levels of fat and total solids.

Fat plays an important role as well.

Higher-fat milks usually produce a richer mouthfeel and a creamier texture. They also influence how flavour compounds are perceived. This helps explain why yogurts made from sheep or buffalo milk often feel very different from those made with standard cow’s milk.

The flavour of the milk itself matters too.

Even before fermentation begins, different milks have their own characteristics. Goat milk, for example, contains a different fatty acid profile than cow’s milk, which contributes to its distinctive taste. These flavour differences remain noticeable after fermentation.

The animal’s diet can also affect the final yogurt. Milk from animals grazing fresh pasture may differ from milk produced during other times of the year. This is one reason why the same brand of milk does not always behave exactly the same way from batch to batch.

Processing methods make a difference as well.

Pasteurisation, homogenisation, filtration, and concentration techniques can all influence how milk behaves during fermentation. Many experienced yogurt makers eventually discover a favourite milk brand simply because it consistently produces results they enjoy.

So, is there a best milk for making yogurt?

Not really.

Cow’s milk produces the style of yogurt most people are familiar with. Goat milk often creates a softer yogurt with a unique flavour. Sheep milk tends to produce a naturally thick and rich yogurt, while buffalo milk is famous for its creaminess.

Each has its own strengths, and much comes down to personal preference.

The next time your yogurt turns out differently after changing milk brands, do not be too quick to blame the starter culture. The bacteria may be doing exactly the same job as before. They are simply working with a different raw material.
